Bruce, a friend of my (Katie) dad's, started making this Extra Virgin Olive Oil on his family farm in Italy. Gabbiano Uno is the harvest of a long-dormant orchard located in a Chianti micro-climate especially well-respected for it’s superior oil production. A blend of 40% Leccini, 40% Frantoiani and 20% Morellini varieties, their olives are hand-picked and processed within hours at a frantoio just moments from the trees.
The Flavor profile is rich and nutty with a smooth start and very sharp finish, this olive oil has a big nose with abundant notes of eucalyptus, roasted pine nuts and warm olives.
